Looking for a Keto Gumbo Recipe? Stop right here. This recipe was based off of my gumbo recipe from long before I started keto. I swapped out a few of the ingredients the broke the laws of keto, and BOOM! we have a delicious keto gumbo recipe!

Ingredients:

  • 1/4 Cup Olive Oil

  • 1/4 Cup Coconut Flour

  • 1 TSP Xanthan Gum

  • 1/2 Onion

  • 1/2 Green Bell Pepper

  • 1 Rib Celery

  • 2 Cloves Garlic

  • 3 Cups Chicken Stock

  • 1 Bay Leaf

  • 1 TSP Dried Thyme Leaves

  • 13 OZ Spicy Andouille Sausage

  • 10 OZ Can Chicken Breast/Thigh

  • 2 Green Onions

  • 3 TBSP Fresh Chopped Parsley

  • 1 Cup Tomato Sauce

  • 12 OZ Bag Frozen Cauliflower Rice

  • Salt to taste

Let's Do This!

  1. Brown sausage in pan and set aside.

  2. Chop onion, green pepper, celery, parsley, and green onions. Set aside.

  3. In a large pot, mix oil, coconut flour, and xanthan gum

  4. Cook over medium-high heat, stir constantly, until it becomes the color of peanut butter.

  5. Add onion, garlic, green pepper, and celery.

  6. Stir quickly for 4 minutes.

  7. Add stock, seasonings, chicken, and sausage.

  8. Bring to a boil.

  9. Add tomato sauce, green onion, and parsley.

  10. Add salt to taste.

  11. Allow to simmer for about 10 minutes.

  12. Add in frozen cauliflower rice.

  13. Once cooked, serve.

  14. Enjoy!
