This delicious granola is the perfect breakfast treat. Pour some almond milk over it for cereal or form it into bars to take on the go. However you choose to eat it, you will be fueled all day because this granola has 85% fat!

Ingredients:

¼ c melted butter
1 c almonds
1 c pecans
1 c macadamia nuts
¼ c pumpkin seeds
¼ c black chia seeds
¼ c erythritol
½ tsp salt
½ c flax meal
1 egg white
1 tsp vanilla extract

Let’s Do This!
Preheat oven to 325F. Line baking sheet with parchment paper.
Melt butter. Set aside to cool.
Grind almonds in a food processor until chopped into small pieces. Add pecans and macadamia nuts, continue to grind until nuts are coarsely chopped into small pieces. Set aside in a large bowl.
Add pumpkin seeds, chia seeds, coconut flakes, and erythritol to the food processor. Pulse until blended then add the mixture to the bowl.
Add salt to the bowl mix until all is combined.
In a small bowl, whisk egg white until frothy. Add to granola mixture.
Add vanilla to melted butter mixture and add to granola. Mix granola until everything is combined. Evenly distribute onto baking sheet or form into bars.
Bake for 15-18 minutes until golden brown.
Drizzle some melted chocolate if you are anything like me.
