Let's Do This!

  1. Heat 1/2 in of coconut oil in a deep pan. Oil should be about 350F for best frying.

  2. Add 2-3 tbsp of coconut flour to a small bowl.

  3. In another bowl, beat 2 eggs.

  4. Using a food processor or blender add the parmesan, pork rinds, and seasonings.

  5. Pulse until your coating is a fine powder, then add coating to a third bowl.

  6. To coat each pickle slice, dip it in the coconut flour first, then dip the pickle in your egg wash, last generously coat the pickle in your seasoned coating.

  7. Repeat step 6 until all pickles are coated and ready to fry.

  8. Fry pickles between 350F and 375F. Pickles should be fried in small batches to keep the oil temperature consistent. Flip pickles about halfway through cooking, each side should be golden brown.

  9. Enjoy!
