Let's Do This:
Dry ribs with paper towels
Remove membrane from underside of ribs by grabbing a corned with a paper towel and pulling. This my require a knife to pull up a corner of the membrane.
Apply dry rub to both sides of ribs.
Wrap in plastic wrap for 3 hours.
Preheat oven, smoker, or grill to 250 degrees Fahrenheit.
Place ribs meat side up directly on grate. If using an oven, use a baking rack on a cookie sheet.
Cook for 2 hours. The internal temperature should be between 170 and 180 degrees.
Wrap in a double layer of aluminum foil.
Return to grill for an additional 1 hour. Internal temperature should be 204-208 degrees.
Let rest for 20 minutes.
Unwrap the foil and serve.
