This take on a traditional keto cookie recipe was inspired by a non-keto food network recipe. I found a way to make keto friendly, maple, bacon, chocolate chip cookies with only two net carbs! Is it excessive? Possibly. Do I care? Nope!

Ingredients

Dry:
1.5 cup almond flour
.5 cup erythritol
1 tbsp beef gelatin or xanthan gum
1 tsp baking powder
Wet:
.5 cup butter
1 egg
1 tsp vanilla extract
1 tsp (or less) maple extract
Toppings:
.5 cup Lily's chocolate chips
3 pieces of thick cut bacon

Let’s Do This!
Preheat oven to 350F.
Cook your bacon until crispy. Let cool on a paper towel to absorb grease.
Combine all dry ingredients in a small bowl.
Combine all wet ingredients in a large bowl using a hand mixer.
Slowly add your dry ingredients into your wet ingredients until the mixture is fully combined.
Chop bacon into small pieces. Try not to eat all of the bacon!
Fold in chocolate chips and bacon with a rubber spatula.
Separate into 15 balls.
Place cookies roughly 1.5 inches apart. Press them down slightly on a cookie sheet lined with parchment paper.
Bake for about 15 min until the edges are golden brown.
