For those of you that might not be familiar, tallow an a fantastic fat source on the keto diet. Tallow is essentially beef fat that has been rendered to a point where it is shelf stable. It adds a ton of flavor to anything you cook in it. Personally, I like to use it when cooking foods that benefit from a "beefy" flavor, like eggs. If you are looking for a way to utilize you fat trimming, and create a delicious fat source, then this recipe is for you.

8 Oz or More of Beef Fat Trimmings (saved from trimming roasts or steaks)

Let's Do This:
Preheat oven to 225F.
Remove all traces of meat from the beef fat.
Cut into roughly 1 inch cubes. It doesn't need to be perfect.
Place cubed fat into a casserole dish.
Cover dish with aluminum foil.
Baked for 5-7 hours, until fat cubes look like pork rinds.
Remove and let cool for about 20 minutes, until pan is cool to the touch.
Strain through a strained lined with cheese cloth.
Store in glass jars either on counter, in fridge, or in freezer.
